First up, Chef Marco Genovese is totally the real deal, you guys. Born and raised in Sicily he grew up prepping (& eating) pizza, the traditional way.
Chef Marco is so passionate about his pizza recipe, and it’s with good reason. In fact, not only does he use authentic ingredients like datterino tomatoes and olive oil from Italy but he uses a 250-year-old UNESCO World Heritage Recipe for the dough. Of course, he’s got a few other tricks up his sleeve as well to make the best pizza in Dubai (but we don’t think he’ll like us for sharing all of them!).
